Guanimes con Bacalao | How to Make this Delicious Puerto Rican Dish!
Guanimes con Bacalao is one of my favorite Puerto Rican dishes. You might be wondering what the heck it Guanimes con Bacalao and how do I pronounce it, haha. (Reference the video for pronunciation.)
Guanimes con Bacalao is a very traditional Puerto Rican dish that dates back to the pre-Columbian era. And it translated to the following Boiled Flour Dumplings with Salted Codfish. I think it sounds better in Spanish! 😄
- Guanimes: It’s Boiled Flour Dumplings
- Bacalao: salted codfish

Instructions / Ingredients List
Reference the video along with instructions below to make Guanimes con Bacalao. If you follow the video you will end up with about 5-7 servings.
Guanimes
- Start boiling a large pot of water with a tbs of olive oil and 2-3 whole garlic cloves
- Mix the following ingredients to form the dough
- 4 cups – All-Purpose Flour
- 2 cups – warm water (add more as needed)
- 1/2 cup – cornmeal (optional)
- Season with salt.
- Once the dough is ready section of little pieces and roll to form little logs. (Reference the video for shape.)
- Drop the little logs in the boiling hot water and cook for about 20 mins
Bacalao
If you’re not familiar with bacalao/codfish let me tell you it’s super salty so you have to get rid of some of the salt by boiling it in hot water for about 30 mins drain the water and boil it again with fresh water for another 30 mins and then drain the water again. You can repeat this step as many times as you need to achieve your desired level of saltiness.
In a separate pot mix the following Ingredients until fragrant.
- Olive Oil
- Red Onions
- Red & Yellow Bell Peppers
- Garlic
- Cilantro
- Sofrito
- Bay Leafs
- Oregano
- Sazon
- Cumin
Last step is to add the prepared codfish mix it well and enjoy!
